Gingerbread

Since Christmas is coming up soon enough, I thought I would post my gingerbread recipe in case anyone needed it.

Gingerbread

1  C. Butter
1C. Sugar (I prefer to use dark brown sugar it gives it a richer taste)
2 eggs
1/2 C. cold water
1 C. molasses (again, I like the dark)
2 tsp. soda
4 tsp. ginger
1 tsp. cinnamon
1 tsp. salt
5 1/2 C. flour (more as needed)

Cream butter & sugar, add eggs. Separately mix water, soda and molasses then add to butter mixture. Add dry ingredients, knead to firm dough adding flour as needed. Chill several hours. Roll 1/4-1/8 inch thickness, cut and arrange on cookie sheet. Bake 350 for about 7 min.

This makes a ton of cookies. If you are crazy, you can double it
